If you are a lucky member of the Innisfree Veggie Garden CSA (Community Supported Agriculture) program, you are receiving tons of tomatoes this week. It may seem overwhelming, at first… but, there is a light at the end of the tunnel. There are so many wonderful things you can do with this fruit (yes – it is a fruit, technically not a vegetable). Here are a few ideas (for further details, click the links please):

  1. dehydrate them. One does not technically need a dehydrator to do so, it can be done in the oven at a low temperature.
  2. make some veggie stew or ratatouille for supper. This option also involves using some of your provided onions, eggplant, and summer squash. :)

  3. make some homemade tomato soup (and freeze it for those cold winter days).

  4. make some very simple tomato salad. I just chop tomato, shred some basil (which is also coming in your CSA), mince some garlic, and mix with olive oil and salt and pepper. Ta da!

  5. add sliced tomato to one of the garden’s homemade frozen pizzas (available in the Pasture Fence freezers). It tastes awesome. I also recommend adding some dried or fresh herbs such as thyme, oregano, and basil. Yum!!!
