Tomatoes, tomatoes, tomatoes

Tomatoes

If you are a lucky member of the Innisfree Veggie Garden CSA (Community Supported Agriculture) program, you are receiving tons of tomatoes this week. It may seem overwhelming, at first… but, there is a light at the end of the tunnel. There are so many wonderful things you can do with this fruit (yes – it is a fruit, technically not a vegetable). Here are a few ideas (for further details, click the links please):

  1. dehydrate them. One does not technically need a dehydrator to do so, it can be done in the oven at a low temperature.
  2. make some veggie stew or ratatouille for supper. This option also involves using some of your provided onions, eggplant, and summer squash. :)

  3. make some homemade tomato soup (and freeze it for those cold winter days).

  4. make some very simple tomato salad. I just chop tomato, shred some basil (which is also coming in your CSA), mince some garlic, and mix with olive oil and salt and pepper. Ta da!

  5. add sliced tomato to one of the garden’s homemade frozen pizzas (available in the Pasture Fence freezers). It tastes awesome. I also recommend adding some dried or fresh herbs such as thyme, oregano, and basil. Yum!!!

Good luck with your tomato-y mission.  If you do have trouble using up your red fruits, please just distribute them to the compost pile.  Bon appetit!

The beauty of food

I came across an article today titled: Artists With Developmental Disabilities Explore The Beauty Wrapped Up In Food. Our art classes often talk about food: What we had for breakfast, what we hope is for lunch, what we’re cooking for dinner, what we dream about but don’t often eat, what we will have as a treat if we do our work, what we can’t eat because of allergies etc. etc. etc. It can seem obsessive and even controlling but somehow, as this article points out, it becomes quite beautiful when turned into art. In the past, we have done many projects revolving around food- some prompted by a group project idea some not. Recently we colored and cut and pasted different fruits to glue onto brown paper and make a “fruit salad tree”. One artist just finished a stuffed version of a cupcake. Others have painted pizza, sculpted donuts, and we even did a whole series of stamped vegetables last summer. Take a look at the article to see some of the beautiful paintings that are coming out of Creativity Explored: ” a supportive studio environment for artists with developmental disabilities in which they receive individualized instruction from mentoring artists, quality art materials, and professional opportunities to exhibit their work. “

Here are a few examples of the work they’ve made surrounding the idea of food:

“Unusual” CSA veggies

CSA season is well underway!  Lots of lovely and delicious vegetables are growing, being harvested, and showing up in our doorways.  Several veggies are easily identifiable and are easy to incorporate into yummy dishes, while others are not so familiar.  One vegetable that I have been struggling to find usage for is celery.  Here is an article that shares some great ideas for using up celery: 7 reasons Celery leaves deserve far more attention.

Stay tuned for some more creative ideas and recipes to make good usage of your veggies!

“Spring break” visits in the Midwest

I (Amy) am currently on hiatus from the lovely veggie garden, but my mind is still partially focused on the garden. I had the privilege of visiting a great organization in South Bend Indiana called Green Bridge Growers. Green Bridge uses aquaponics to grow their yummy and beautiful produce. Their aquaponics system involves a colony […]

Spring “training”

It’s been a week of beautiful weather! Thanks to the sun and nice temperatures, we have been able to do a lot of work outside. One main task this week has been spreading compost and preparing beds out in the field for planting.  Filling wheelbarrows and carts full of compost, pushing them out into the fields, […]
